The uncoated surface offers good reflectivity for even dispersion of heat -- which means more consistent, even baking and gradual browning. After repeated use, darkening of the metal will actually enhance baking performance. Two stainless steel handles riveted to the pan make removing the pan from the oven easy. Perfectly sized for baking lasagna or roasting meats or poultry. Includes a non-stick roasting rack with fold-down handles.
The aluminized steel finish combines the durability, strength, and superior heat conduction of steel with the corrosion-resistance of an aluminum-silicone alloy. In the product review they brag about the ends being folded over. And they are, to the inside. This just creates a very thin gap between the fold and the end of the pan in which grease, dirt and fluids accumulate, since it is impoosible to clean between the sheets of metal. It was probably designed to be sealed, but it is not. Using the pan the next time you will see the slight leakage over time of these fluids at the bottom of the crease. Great place for bacterial growth. The Chinese have done it again! This pan has nothing to do with Chicago.

This is a sturdy pan that can take regular use without babying. The handles are great. I didn't want to spend a fortune for a decent roasting pan, so this one was a great find.

I use this pan mostly for turkey and pulled pork. It is a nice sturdy pan with a useful rack inside. It washes well in the dishwasher. I recommend putting a couple of cups of water at the bottom when cooking turkey. This makes a nice stock at the bottom and prevents burning. Also, if you do the 'upside down' method of cooking turkey, you should probably spray the rack with cooking spray so that it will not stick when you go to turn the bird right side up. This fits a 15lb bird perfectly. Anything larger may not fit.

For pulled pork, just line the bottom of the pan underneath the rack with aluminum foil and spray the rack with cooking spray before adding your rubbed pork butt.
